Healthy Rice Krispie Treats

You know you’ve found a really great recipe when you make a batch of something and the very next day you just have to make some more. Such was the case last weekend with these Rice Krispie treats I found over at Chocolate Covered Katie. I made two versions- peanut butter and chocolate. Both were super easy and super yummy. I think we preferred the peanut butter though.

Here is how I made them:

Peanut Butter Rice Krispie Bites
(original recipe here)

3 cups Rice Krispies
1/2 cup plus 2 TBS fresh ground natural peanut butter
1/2 cup agave nectar
2 tsp vanilla
1/2 tsp salt

Chocolate Rice Krispie Bites
(original recipe here)

3 cups Rice Krispies
1/2 cup plus 2 TBS fresh ground natural almond butter
1/2 cup agave nectar
2 tsp vanilla
1/2 tsp salt
1/4 cup cocoa powder

For both of these, first place Rice Krispies in a large bowl and set aside. Then take all other ingredients and combine in a small saucepan. Heat on low till ingredients and combined and melted. Pour over Rice Krispies and mix until thoroughly combined. Forming them into balls was a little tricky, but what I found to work was to use a sandwich baggie as a glove. Press firmly as if you were making a hard-packed snowball, as they tend to not want to stick together. Store them in the fridge because they like to fall apart at room temperature. Warning-they are addictive!
